Agar belongs to the galactan polysaccharides, which make up the intracellular matrix in red seaweeds/marine algae belonging to class Rhodophyta. Agar is naturally slightly sulfated, and is a complex mixture of polysaccharides. Agarose is a neutral polymer component of agar.
